Black cherry, plum, and vanilla intertwine with beautiful hints of anise and caramel. Additional notes of coffee, dark chocolate and cassis linger on the nose. Cherry pie and blackberry combine with hints of rosemary, perfectly complementing complex notes of allspice and aged tobacco. A smooth, seamlessly integrated palate with rich structure and balance.
On the winemaking side, supple tannins are courtesy of whole berry fermentation that took place over a eighteen day period in mid October 2016. The Cabernet was aged in stainless with French Oak staves for 22 months while utilizing a proprietary micro-oxidation protocol. Cascading Cabernet, Tannat, and Malbec flavors will continue to delight your palate over the coming years because of the complex structure and near perfect acid balance of this wine.
The 2016 vintage represents a breadth of quality from our grower partners and their love of the land. This blend of vineyards captures the winemaker’s expression of the Red Hills AVA vintage in California. Cheers!
